A survey of recipes indicates that the common denominators include a whole chicken cut up, water, flour, and salt. Sometimes the dumplings or pastry are made with flour and egg, and other times with flour and Crisco. The make-it-fast recipes often recommend Annie’s Old Fashioned Flat Dumplings (also known as thin pastry strips, found in your grocer’s freezer section) or Bisquick. The fancier recipes have you throw in a little baking powder and baking soda when preparing the dumplings or pastry. On occasion, cornmeal is used instead of flour.
